Don wants to have this recipe as he has to cook for himself while I am in Japan!

Here it is:

Salmon baked in foil

Preheat the oven at 220 degrees.
Spread 1 teaspoon oil on a piece of aluminium foil.

Salt and pepper salmon. Place salmon at the center of the foil.
Then put any cut vegetable on top of it as much as you like.
Cabbage, carrot, cerely, enoki mashroom, pepper, for example.

pour over 2 Tbs. ponzu (citras shoyu) and put a little butter on top.

hold hoil to the center.

rolll up the both ends.

Bake in oven for 20 minutes. Done!

To make ponzu (cirtus shoyu) if you don't have:
cook 1/4 cup mirin in mirowave or in a small pan till it boils, then add 1/4 cup shoyu, and 1/4 cup citrus juice (lime or lemon is okay). If you have konbu, put a small piece in it.
